What is Frenching a Rack of Lamb?

Frenching the rack of meat refers to removing all the excess meat, fat, and cartilage from the bones of your rack. Stripping the meat away is done for aesthetic purposes – it doesn’t actually change the flavor or texture of the cooked rack of lamb, it simply makes the rack look a bit neater on the plate.
